Salade Texanne – Cafe Marie, Golfe-Juan, France

A cafe on the sea front of the French Riviera is probably not going to have the most challenging menu, but they offered a fantastic selection of salads. Given the location, a predictable choice would have been a Nicoise, but this ‘Texan’ one simply had more appeal at the time. It was a little on the oily side, but the combination of cajun spices, onions, and peppers coating the tender chicken was pleasant and filling after a hard day’s sunbathing.

Special bacon and eggs with asparagus

Mr Rice brought home some lovely, fresh asparagus, so I combined this with some fresh organic eggs from Abel & Cole, and some top of the range smoked bacon.

Blanch the asparagus for 3-4 minutes, then garnish with smoked bacon and a poached egg. Top it with hollandaise sauce, or maple syrup.

Weird but tasty snack – Oatcakes with cream cheese and anchovies

I used to eat anchovies on hot buttered toast, but I don’t eat much toast these days. This is a slightly healthier, low GL version. Oat cakes have a wholesome, rough texture, so slather on some smooth cream cheese and then blast it with the tang of the anchovies. A delicious post-pub snack.
