Weird but tasty snack – Oatcakes with cream cheese and anchovies

June 3, 2007

I used to eat anchovies on hot buttered toast, but I don’t eat much toast these days. This is a slightly healthier, low GL version. Oat cakes have a wholesome, rough texture, so slather on some smooth cream cheese and then blast it with the tang of the anchovies. A delicious post-pub snack.

  1. Try oatcakes with avocado and homemade houmous…

This is a traditional Greek dish – can be used as a dip or a spread for sandwiches. It is a lot cheaper to make than buy though many spermarkets do stock it.

1 can (approx. 400g)of cooked chick peas (or you can soak overnight and cook 1 cup of dried chick peas)

    2 Tablespoons of olive oil

    1 – 2 cloves of fresh garlic

2 Tablespoons of tahini (sesame paste)

    the juice of 1 lemon

    a little water to blend

    salt and pepper (optional)

  2. What a great idea for a simple quick snack to enjoy an anchovy blast! Thanks for the ‘recipe’…

  3. Mmmm to the onion, cheese and sausage rolls. The pastry had a melt in the mouth texture and the filling concotion of meat dairy and onion was genius. They are great Hors’ deurves for a small party number.
